The internal disciplinary cultivation implemented by the farm aims for a quality product using environmentally responsible practices. The lands that are used for the cultivation of durum wheat follow a three-year rotation, alternating crops of renewal to maintain soil fertility. All stages of production are carried out independently by the farm and provide for the plowing in the middle of summer, the preparation of the seed bed in early autumn, the sowing of autumn - Winter cover crops in early November, the fertilization of 1 ° coverage late January / early February, fertilization of 2 ° coverage in late March / early April and finally to full maturity (ie humidity inside the grain, equal to 8 /9 %) when harvesting is done. The location of the farm in a central region of Marche, particularly suited for the production of durum wheat, guarantees a quality brand and proximity to the massive Mount Catria, although occasionally causing a strain on the harvest due to low temperatures, gives the grain the best organoleptic qualities.
